To tell you the truth I use a Thermapen or maverick Thermometer when doing roasts so I can take it off and let it rest just before it hits the temp I want.

Sounds good Nath, how long would you cook a 3 - 3.5 kg chuck for low n slow?

Hey Chris, thanks for the welcome it's good to be here!

I've just checked out your website and i'm definitely interested in doing a BBQ school day, they sound awesome!

I'm heading back to blighty for the brothers wedding in a couple of weeks but back early January, have you got any dates set for late Jan / early Feb yet as i'd love to book a day in?

Just found a other pic, this one wasn't from the weber but a cheap kettle from bunnings.

Just a small piece of beef I cooked about 6 weeks ago
