I'm an import into Brisbane from North Carolina..... Still pretty new to smokers and such.

I thought they smoked a lot in the Carolinas but I heard theres quite a culture difference between NC & SC.
Not sure how long you've been in Brissie but it gets very humid up there. I used to live in Wynnum about 11 yrs ago.
Over the past 4 years, American style BBQ & comps have really taken off down here and the amount of BBQ products here in Australia has risen tenfold...almost to the point of saturation....but its good all the same.
I'm taking it you want to get into charcoal smoking, many people start off with a weber kettle grill then move on to a bullet style Smoker like the Weber Smokey Mountain or Pro-Q or perhaps they go for a Komado and theres the Texas style offset.
Then theres the pellet grills, at least 5 different brands available.

I've been tinkering with an offset smoker for the last year or so. It'll take a few decades for me to be passable at it lol
