In preparation for Straya Day i bought a lamb quarter from a meat wholesaler and intend to smoke most of it.
There is a 2kg leg, a shoulder, loin, rack, shank and some chops (which will go on the barbie)
Can anyone help out with cooking temperatures for these cuts? I plan on cooking at 225 and have read I should get to 140 for the leg. What temperature should I get the other cuts to?

225 sounds right for shanks and shoulder, I'd do everything else at 200c plus until desired doneness, shoulder and shanks will take a minimum of 6 hours
