Hey guys
Looking into pork ribs. Been thinking of doing them in the kettle
2 racks of baby backs.. not overcrowded in a 22” ?
Don’t have a slow n sear was just going to bank the charcoal. Would prob fork for one if it’s a hell of a lot easier...
Any tips?

2 racks of ribs will easily fit into a Weber kettle, especially if you use some sort of rack to stand them upright.
Regarding the use of charcoal, have a search on this site for either 'the snake method' or 'the minion method' and you'll get some good tips for extended smoking cooks. Both of these methods usually use briquettes, such as heat beads, as they give a more consistent and predictable temperature than lump charcoal.

Thanks. Done. Pork but and some beef ribs using the snake so far. Gonna give ribs a go tomorrow!

I've always found beef ribs to be more forgiving than pork ribs. Don't forget to post some pictures up in the "What did you cook" thread.
