Hi All iam planing to do s brisket on the weekend should i wrap it after a few hours or not.
every time i do a pice of beef i can not cut it it juat fall apart i really want to cut it up and stay together and still be juicy.
i think wrapping it might stew it a bit and cause it to just fall apart but iam afraid if i dont wrap it it will dry out . Any advice would be great Cheers Craig.

How about try a dry rub and make a nice crust to protect it?
