My Peking Duck Recipe- As requested.

So I have had some requests for my easy peasy Peking Duck. (c)
I am really keen to get feedback from you weber/kamado-kettle cooks on this so I hope you will do a forum log for me & all to see what results you achieve with it......Good Luck with ye duck!!!!

(c) 2016. Cure Brine & Smoke/Russell Stevens.

Ingredients list:
250ml apple juice.
1/4 cup soy sauce.
2 tbsp. honey.
1 tbsp. sesame.
1 tsp five spice.
2 cloves crushed garlic.
1 tsp ginger.
2 or 3 star anise.
Splash of apple cider vinegar. ( maybe = good tbsp.)
Good splash of hoi sin sauce. ( maybe = 2ish tbsp.)
1 tsp onion powder.
1 tsp crushed coriander seeds.

I bring all this to boil in a saucepan and then simmer for 20/30 minutes. Cool duck and brine into zip-lock bag, expel any air, then I vacuum that. 24 hrs in the fridge and your good to go with your method of cooking. Hopefully you end up with this sort of a duck or better.
