Whole beef shin

Post by baguspeter » Thu Apr 27, 2017 9:16 pm

Hi all, I have a 4.2kg wagyu shin and I'm feeling a bit nervous about cooking it,I'll probably use the dalmation rub and cook it like a brisket, anybody got any other ideas ?

You could treat it like a lamb shank

Yep, Like one of Titch's famous lamb shanks, Id boat it in a rich beefy stock with a French mirepoix of carrot, onion and celery that will reduce down to a thick glaze.
Turn it over every hour in the smoker set at 275F. Add more liquid if needed until its tender and heavily glazed.
If trees screamed when we cut them down, We wouldn't. If they screamed all the time we would.

Thanks for the info,I smoked it at 210f until an internal temp of 155f then boated it with plenty of stock until 203f it probed like butter and was sensational. Unfortunately I am not very tech savvy so don't know how to post pics.
