Hey
I've picked up a rack of beef short ribs to throw on the offset this Sunday but I had a question regarding the membrane on the ribs.
From the few recipes I could find the first time I cooked them, it said to leave the membrane on for beef ribs, as there is a chance the rack can fall apart. So I did, but once it was cooked it was already tough enough to slice through, let alone eat.
So what's the word on rib membrane for beef ribs? On or Off?

I've heard there's 2. Take one off. Leave the other on.
