tomato sauce powder

Post by Rabika »

Was just wondering if anyone has tried to do this i have some tomato sauce in the dehydrator at the moment and it seems to go more like fruit leather then dry so that i can make it into a powder. do you think if i leave it on long enough it will dry out enough or is that its final form?

No, I havn't seen that in years either!

But I just did a search and the Spice House and Herbies both have it!

Also here is how to DIY it: http://www.seriouseats.com/2013/02/diy- ... paste.html

Wonder if it's like the dehydrating gig. Remove the moisture when in season, store, then rehydrate with heaps of flavor in what ever.

freezedrying = the answer, same with mustard powder.
the reason is that heating vinegar (which is a big part of it) will make you loose that pop
