Almost a year late, something happened to my pork on that occasion but the beef turned out great. I'm planning a similar combo for this Friday, hoping to use pork shoulder and beef chuck, all in the WSM, prepared Friday but I want to serve Saturday for the game. Last year we ended up having the beef the following day, I think I saved the juices, chucked it all in the fridge then poured them back over and reheated gently under some foil.
