SNAPPER

New neighbors have just moved in, and have a huge boat! They just knocked on my door and gave me this! Scaled and gutted!

So HOW DO I COOK THIS in a weber kettle? ? I know to cut the head and tail! But what else, do I do for flavour and cooking times! I plan to cook tomorrow night (no room in freezer) have invited 4 friends over! And would I cook with full heat or low heat??? Have never cooked a fish like this before!

dont think ive posted this recipe here but here goes
Sounds a little weird doesn't it?
Well in melbourne with the snapper season almost in full swing i felt like something a little different

this recipe it tastes amazing, the mix of smoke, sweet, and salt compliments this fish brilliantly.
a great way to change it up a little for the family

1. Apply 1.5 tea spoons of sugar cure to each fillet. Drizzle with maple syrup and a light sprinkle of sugar.
2. Refrigerate for 24 hours
3. Setup your bbq to 90c and a light smoke. I used apple wood
4. Cook untill fish is firm and reached safe temp. This took me 3 hours.
5. Mix into pasta, salads, on crackers ect ect.

So if I was to cook the fish whole would I foil the fish, like you see on tv shows??? & by the way shayne, its under general & iam asking for help! If you want to be a Tool, dont read it when the next person responses to my post!!!!!!!!!! I am quite sure there would be a million other post's here under the wrong headings!!!!!! But if u want to Dob

Better stay sweet with those neighbours, that's an awesome fish.
Might have to treat them to some good BBQ.

Just had I look in the australian weber book! Says to cook for 50mins for 2.5kg fish. But this is bigger!!! What can I stuff it with??? Any ideas!

Are funny just noticed her in the photo! This time tomorrow she is having the snip done at the vets! Poor little girl!!!

No can't remember cook time,cook until it flakes good with a fork,sliced potato and tomato under it ,and some in the cavity,drizeled with EVO,
had to make the boat out of foil to fit,i think the recipe is from womans weekly, or google baked snapper.
