hi all
been smoking ribs about 2/3 years now and have my method down pat, im hoping to try something new but cannot find a method online about it. I usually smoke spareribs using a 3,2,.5 method of such, i am looking to experiment with glazing as it is something i am yet to do much of. At lunch at meat and wine co today i noticed the sweet bits of char and decided it is something i have to do. Obviously after 6 hours of smoking the coals will not be so roaring as to char if im using the snake method on the weber or smoking on my offset, do any of you char over coals or on a gas grill after smoking? i know most of these restaurants either boil or slow cook then do it but i am curious to know if this is a good idea after smoking too?
i am aware people just paint the glaze on for the last hour or so but i am seeking a decent char on the glaze

Simple, no magic involved.
Just increase the heat for the last half hour that you have the glaze on...
A higher sugar content in your glaze will also help give the effect you are after.
Just a matter of experimenting with this.
It will get you any amount of char you desire - better than charring on hot iron.
Too easy to burn the glaze that way.

Yes, I agree with meat and eat - crank the heat up, and baste every 10mins or so.
To crank the heat up on a snake simply take a couple lit beads and put them onto unlit beads, and also take some unlit beads and put them on the lit part of the snake.
A little bit of direct grilling can't hurt to finish either (if required).

I go direct at the end and I reckon it's a must for lamb ribs which can have a higher fat content. Renders them and gives them a crispy finish. At the end of smoking when your briquettes or charcoal isn't so hot is the perfect time. I crisp them up meat side down then flip and apply first glaze and then another if need be.
