My brisket has a bone.....

Post by Emo »

I'm cooking up some Brisket and Pork shoulder for my NYE shindig. Today I went out looking for a brisket around the Footscray Viet butchers but as the Market was closed my choices were limited.
I ended up with these

Estimated at about 1.5 kg each.
My question is
Is it normal for brisket to have bones? (I've only done brisket once before and it had the same bones, it came out a treat, but do I have the right cut and should I leave the bones?)

Ok thanks Dane.
I'll cut them out tonight, out of curiosity is there any problem leaving them in like I did the first time I did Brisket?

Chuck it on as is, The bones will fall out by themselves when its done. Bones = flavour so a good find.
Didnt need the dog meat thing but its kind of true.
If the brisket is fresh it goes into sausage before being put in the free dog meat bin.
Use your snoser .
If trees screamed when we cut them down, We wouldn't. If they screamed all the time we would.

They smell fine, I've cooked one and pulled the bones straight out. Ill fridge it before bed and reheat it in the Arvo.

Thanks for the help.
