That's awesome Gnol! Who doesn't love spanakopita? I can only imagine one made the traditional way. And what a blog! Particularly impressed with the great photography. Thanks for sharing.

I'm a very patient person (just ask my sister in law who hands me the 5 year old devil when she's ready to explode...) but rolling filo by hand would tip me over the edge.
Several years ago, I had the pleasure of doing a tour of the Antoniou filo pastry factory. What a great place. Very dedicated people, and even the maintenance guys had a passion for good food and tradition (I know, a bit of an oxymoron when it comes to a factory environment) and they showed how critical it was to get the right amount of "work" into the dough to get the gluten to work properly - otherwise it's an instant fail and they have to start over.
It's the only brand I'll buy now, especially since it's made locally, and they employ a couple of dozen Aussies (quite a lot from Greek descent too).
