Pork Crackling Crumbed Chicken, JoshW inspired

Now you done it Josh, what a tasty alternative to Bread Crumbing.
I am holding this one up to do Lamb Cutlets.

I annoyed him enough and he assisted.
I was surprised to find out Pork Crackling can be bought like crisps here, learnt something new.
So of we went, changed it up and added some deep fried shallots.

Mixed the ingredients and some Chicken salt in a bag and gave it a beating.

Chicken was dipped in Mayo then crumbed.no Flour, didnt need it.
set in fridge for a few hours to set.

To me this is the find of the year, what an awesome way to crumb with a flavour that just works

oh man...you're killin' me slowly with your food :P

Where did you get the idea to use dried pork crackling instead of breadcrumbs....what a great idea.Oh yeah..BBrethren...shoulda known :lol:


if i can find bags of that stuff and providing we don't scoff them in front of the telly...i'm going to try this.

Gave it a try on chicken wings, set webber kettle up with vortex and charchole best wings we have ever had ,no more panco crumbs here, pork crackling is available in all super markets around here, great post Titch good stuff. sorry no pics.

Did you have to fry them off a bit first or is there enough fat in the crackle to make them crispy when you put them on the grill Cheers Craig.

No frying mate, straight in the Akorn, sprayed with a light coat of olive oil
