Smoked roast pork leg.

Post by Bronson »

Did this the other day for old mate next door as he loves pork sandwiches and rolls. Turned out perfect, was super tender and good smoked flavour, used ruff bark apple chunks, magical taste. Cook took just over 6 hours and was wrapped for another 2.5hrs and finished the crackling off in the oven.

The first hour while using the wood chunks, I kept it at 275 f and after that took it up to 300 f didnt use more then about 25% of the heat beads. I pulled the meat at 160 f and wrapped twice in foil and a couple of towels and into the old malleys esky for 2 hrs.
