Did a rolled beef brisket in the akorn, 5 hours at 275f, one hour in foil, 1 hour in the esky. Heaps leftovers for tomorrow

They cook up fine, I smoked a few not long back and as you say Dane they fall apart. I keep an eye open when in doing a shop but you need to be careful you dont grab a pickled one .

just brought another, today marked down to $10. and a sachet of McCormacks Tennessee Rub. so will be a monday morning cook, in the Akorn. First time its been used since december.

I did one of those rolled briskets on the Weber kettle many many years ago, in one of my first attempts at low n slow and I failed miserably It was before i knew i had to push the internal temps up around 200F or around 95C for it to render and then rest foiled for about a couple of hours...it had a nice crust on it but no flavour and it was tough as old boots....so the dog got it and he wasn't keen either
I've cooked a brisket since but still wasn't great....i'm going to try another again soon trying a different tact....pulled pork has worked for me brilliantly but not beef except a Chuck roast i did low n slow and it pulled just like in your photos.
jus have to keep trying i guess.

Been doing lots of rotisseries latley, got yiros flavour perfect now. A mate asked me in January to do yiros for 25 people, tasted great, but timing was way out. By 90mins. But that just means more beers and finger food
