Woolies rolled boneless pork shoulder

Have started the cook of the shoulder, took it out of its netting and removed the skin and a bit of excess fat push her back together and tied back up and hit it with our bbq rub and sat it back in the fridge for 24hrs. Taken a photo of it before going onto the ProQ, being 2.5kgs thinking about 8 hr cook.
Will add photos later.

Hitting the stall point just under 160f, will be interesting how long it stalls for? Time for pics the pork with the rub just about to go in to the cooker and the cooker in full swing sittjng around 230f.

She has started to rise heading up to 170f now so might be lucky and only have a 2hr stall !! :shock:

Seems to go up 4 or 5 and stall for 30mins!! Hoping the coals will last now.

No put another 1/3 of a holder into the smoker, one thing I love about this smoker is you can do thhat without have to open big doors or losing heat.

How did the pork go there lockyer rub looks great. The enclosure for your rocket is a great idea ,a must do project for me oneday

I understand why people will use foil on these cooks now !! It stalled twice once at 170f and again at 180f . Anyway it was almost an 11 hr cook.
The pork crackling was done in tne oven at 4pm as the wife was looking at my leg and drooling so I thought I had better feed her something.

The bark was magical, some parts were a little dry so next time will looking at injecting and using foil at the stall.
The smoke ring was good but the rub sort of over powered it and the wife wants me to use something with less kick in the next rub.
The downfall of the evening was the wife stuffup (you never heard me said that!) She bought wholemeal bread rolls instead of plain ones like I had asked so all I could taste was the bread roll and some of the bbq sauce !!!! :evil:
But lunch today we have hotdog rolls defrosting so should enjoy them better.

So later today we're heading to Woolies and will grab a few of these shoulders and stock up.

Hey MFW, if yoh study that enclosed you will see it use to have another life, it jse to be the home of my 4 burner gasser, that rusted away. I had to lift the lid as the ProQ was just touching it when closed and I wanted to be able to cook with it in wet weather so you can see the extra timber bit added around the top.

Hi There,
Looks nice from this angle Lockyer. Pity about the stall dramas. But well done. Those shoulders sure are a good buy when you can pick em up cheapish!!
I had the same problem with all my last 3/4 cooks of some hams, pastrami and that recent lamb shoulder I did. They took sooo much longer than the norm for me.

Hello there lockyer ,thats a nice bit of pork there with good pull by the look of it, mate i will put in my two bobs worth regarding overpowering rubs, this is a prob most of us will experience in our bbq adventure so the thing to do is only rub on one or two hours before cooking cheers mate
