Mint injected lamb shoulder

Post by Lewis »

Hi I cooked this up in a hurry to take into a few night shifts for tea,I payed $20 bucks for this shoulder was full of fat,I shouldv gone for a leg at $26 but I was thinking the shoulder would cook quicker,it only took 1.5 hrs on the family q,was the first time I used the webber digital temp gauge, worked well, and tasted pretty darn good the shoulder, I injected mint into the shoulder with rosemary salt and pepper and olive oil in the outside,as soon as the Heat got going into the shoulder the mint ozzed out, could still tast the mint through the shoulder though, think injecting meats will be more suited to pork and on a rotisserie though

I tend to think injecting is a waste of time as with the fat and juices, it oozes out and is lost in a fire or drip pan. I think it's best to get the flavour in the crust and let the natural flavour in the meat speak for it'self.
By the way, smoke is a flavour enhancer.... :)
I know when being a judge in Comps, some of the competitors put injection liquids in their samples for judging and they tend to be very salty due to the amount of salt they use is such injections to get the flavour.

Cheers

Lol ive never put potatoes in the dripping pan....
How did they go??? Do they heat up more on 1 side or do you turn them??

I love cooking with a deboned lamb shoulder (well the butcher does the deboning) its more grilled the way I cook it.....
Oh yeah I don't inject my lamb...

Don't think I'll inject lamb again either, mite give a pork ago on the spit with Apple juice though next time
The veggies go well Paul on the dripping tray they brown up nice then I stack them around the roast
When I do lamb on the spit I get the butcher to bone out a leg and shoulder and tie them in together, works out great feeds around 10 hungry buggars,I do all the veggies in the webbers in the trays saves crap dripping everywhere through the bbq that's when I cook for a lot of people

Lewis.
If you want mint to infuse your lamb, I suggest you seal the meat then lay your shoulder or whatever over a bed of fresh Mint .
The mint infuses nicely,
