St Louis style pork ribs on the Weber Kettle

Picked up some nice St Louis style ribs the other day and cooked them up on the Weber - came out quite nicely. Used the Memphis Magic Dust rub and KC sauce from Amazing Ribs and a couple of chunks of hickory.

Here they are ready to go

Gave them about 45 minute in foil around 4 hours in. After that they were starting to look pretty good

Gave them another 45 mins or so indirect after that before saucing them and finishing them off over coals

Quite happy with how they turned out - Nice bark despite the foiling, decent blush, good pull off the bone without being too mushy. If anything they might have been a tad dry but extra sauce took care of that. Had some issues with high temp mid cook which may account for that :)

They look really good was just wondering what temp you cooked them at,I cooked ribs yesty aswell can't beat them and it gets the kids out home so it's a winner

I try to keep it around 250°F in the dome, which would make it a touch cooler down at the grill, but this cook it was a bit all over the place as I haven't done much barbecue recently and a bit off my game. Basically I want to keep it minimum 225°F in the dome, and I start to freak out a bit when it gets up to 270°ish.
