OK time for more playing and testing. Doing a chook on our Pro Q and trying a method I found on a yank forum, Also using my cast iron wood chip holder in the basket to see if that will give a better smoke. Plus want to have the cook temp at 110°c/225°f

I'm seeing that the cast iron chip basket (same as i have) may not get hot enough in time for the smoking...it needs to be in amongst the coals to generate enough heat to start the smoking process.
Generally larger cuts of meat won't absorb much smoke after about 3 hours.
In my WSM i only use chunks not chips alas not much wood type variety, mostly only mesquite and hickory but theres bags of cherry, apple chunks offered on ebay at certain times.

I use the cast iron holder in my rotisserie and I have loads of chips and no chunks. So it is a bit of a test to see how it would go, now at 3hr 45min and still a few degs short but have notice a nice hickory aroma during the cook so will soon see or taste
I too noticed not a lot of variety in the wood chunk selection. But it is fun learning and playing with the BBQ and trying different things.

It took 4.5hrs, removed the water pan and lower section of the Pro Q and fitted second grill with large alloy tray and baked at 150°c for the last 10 min's
Davo your right! needs chunks... had a slight smoky flavour but not enough for the little lady.
That was my second pulled chook and I am amazed at how tender it was, I couldn't tell where the chicken started and the roll finished, was like eating a chicken flavour bread roll.

Try this Lockyer,
Use your Pro-Q as a Ugly Drum Smoker ( UDS) by leaving out the waterpan entirely, with a full chimney of lit coals, allow the drippings from the chicken to drip on the coals allowing for the chicken to smoke itself....i use this method often.
You can wrap some soaked wood chips in a foil pouch to give you additional smoke taste but try it first without them and just let the chook smoke itself.

Davo, what temp do you cook the chook at ? Or is it no longer adjustable because the water bowl is removed ? Seeing as I have another chook to cook I would like to give this a go.Davo wrote:Try this Lockyer,
