Quail on the Kamado JT

I haven't had quail for around 20 years. I came across a 4 pack on the weekend and thought I would try them on the Joetisserie.

In the basket they go

Cooked at around 180c for....I didn't take any notice how long they cooked.

Hahaha, now, I just wanted to cook this quail but knew I had to serve something else with it.

This may be the saddest thing I have served in a long time, lmao!

As for the quail, it was a fluke that it turned out as good as it did. The Breast was a little over cooked, not much, but the legs were (small as they were) perfect.
The flavor of the quail was a little strong for me though. I love duck, but quail isn't my thing.

Try marinading in a lemon grass/fish sauce/sugar/soy/garlic/salt/pepper mix Pesto 3.

Did Peking Duck in the KJ a few months ago. Prep and roast took over 4 days!

Looks good to me,maybe a touch hotter to crisp the outer a touch
