C'mon guys, I was sure some of you regulars would of beaten me to this :twisted: .

Many thanks to all those who contributed and still continue to do so, the quality food that gets posted here is always amazing and I'm sure I'm not the only one who leaves these threads with plenty of inspiration.

Lets get started.
Turkey and herb cheese burgers with crispy chilli onion rings, lettuce, tomato, hickory smoked bacon and homemade blue cheese aioli on a seeded bun.

Thanks mate,
They are pork leg. I couldn't get shoulder I was after and beef fat. That's all the butcher could give me. Natural casings. I added sage, salt & pepper, home made bread crumbs & Apple Cider.
Quite tasty and happy with the results but looking forward to doing some more. A very satisfying process.

2 kg of chicken gyros and 3 kg of Lamb gyros on the charcoal spit with greek style marinade. Cooked for about 4 hours.

Tonight for dinner it was pork tacos, using pork steaks and soft taco shells.

In a mortar and pestle, I put fennel seeds, chilli flakes, dried oregano, garlic powder, onion powder, paprika, ground cumin, allspice, salt and pepper. Drizzled some oil over the pork and then rubbed the spices in. Let it sit for an hour or so.

Weber Q on high and direct heat. Cooked for about 6-7 mins on each side.

Took them off the grill and let them rest for about 6 minutes. Sliced them up ready to go in the tacos.

Loaded up the taco shell with avocado, coleslaw, pickles and topped with a little bit of sour cream.

Did my first 3-2-1 yesterday! Had found some nice looking beef spare ribs, and had been wanting to give it a go.

Kept at around 110 for 3.15 hours, with just meat and a spot of oil. Smoked with wet hickory chips.

Then I blended up an apple, with some cider vinegar, salt and brown sugar. Made a boat and poured it in, then wrapped it up tightly for 2 hours, at about 140.

Then unwrapped (looked like jelly andndbt this stage!), for half an hour and one more half hour after basting with a store bought bbq sauce. Next time I'll be prepared and give one of the cracker recipes on here a go!

Must say... could have been better.. trimmed a bit more fat off the top but.... Blooming heck they were nice! So tender.

Glad though, my last couple of cooks have been pretty so so, so it's good to have a win!

Titch those sausages look bloody fantastic....I love jalepenos.....you should see how many I lace pizzas up with.... :shock:

I wish you were living in Sydney...I'd love to take a few of them off your hands.
