Yep AnzacPaul I put in a water pan.

I think part of the problem I had with the temp was due to the following;
1) Changed from landmann briquettes to the Hotshots BBQ Briquettes. The Hotshot seem to have a longer burn time so heat build up over the time.
2) During all of my previous cooks (5) there was a light wind which absorbed a fair amount of heat off the kettle. Today no wind (at all) at hours 3 and 4 and I could feel the heat build up on the kettle.

I ended up wrapping it and 3hr at 110c in the oven then 1hr rest time.
It was nice and moist and not too much smoke so the beef flavor was not masked.
I am going to rate it a 6.5/10 :)

I think the rolled brisket should be cooked in a pot roast for maximum effect, BBQ the unrolled ones for sure.

Just my humble opinion

Interesting read Buzza,

I know some think the rolled ones are better cooked other ways, but yours looks good, I'm going to give one a crack in the traeger at some point.
