Seasoned Skirt Steak on Gidgee Charcoal.
Okie Dokie, saw a youtube video of some dude doing hanger steak on charcoal so decided to give it a try. down to superbutcher and picked up a 3 pack of skirt steak. only used one as a tester, if its any good maybe some more tomorrow as appetizers.

taken off and wrapped in foil then rested for about 30mins

Cut down the middle as i seasoned the ends diffrently. fat end was cajun spice rub and small end was a mexican beef salt rub

started to cut it up with a small angle against the meat grain

was alittle to rare for the missus so i put a grill grate in and quickly seared some of it, i think next time ill sit each side on the charcoal for 1min30sec minimum. tasted awesome! but rubs came out full flavor on the meat. no taste of ash whatsoever, very very moist!
