Really? Good to know, it'll save a but more mucking around! I thought it was meant to stop it from losing to much heat during resting.

Just double wrap in foil and fill the rest of the empty void in the esky with towels and it will stay piping hot for hours.

Roast scotch fillet in the Hark Tri Fire. I had it running at 200c most of the time.

Well my Saturday night consisted of grilling some veggies

Blizted it into a salsa

Then used it to top some nachos

Which preceded 6 racks of pork ribs, dry rubbed with Memphis meat dust and slow cooked on the kettle for 10 hours.

Then finished with my own Jack Daniels bbq sauce

As they say in the Simpsons, you don't make friends with salad. A chipotle infused dressing on a coleslaw however...

Then rounded everything off with a baked white chocolate cheesecake with a raspberry and cointreau sauce

Well, due to the weather the low and slow has taken a backseat to some good old fashioned roasting. Management has been on my case for a while now about a very pedestrian roast chook so I knocked one up served with beans and speck with roasted truss baby tomato, fired mac n cheese and gravy.

Tried my hark stuffed burger press for the first time last night, I only managed one pic as we were both hungry and they were gone in seconds!

These two were stuffed with cheese and jalapeño

The Beef Shop got some really meaty pork riblets in.
I rubbed them with a Honey Pecan rub my mate sent me from the awesome range available in the USA, and smoked them over hickory till they were tender and delicious! So good!

Holy Moly....that looks absolutely lip smacking surperb......I know the world has gone nuts over low n slow but that looks amazing.....so succulent....y'know...this says a lot about the merits of a good roast....theres nothing pedestrian about this my friend :)
