Beef cheeks again, and made a Northern India curry this time. Ghee saffron rice as well. The curry was bloody amazing, very complex and the meat was sooo tender.
Went my own way with the rice, spicy potatoes get added into the curry at the end. This is going to be a favourite.

Used some left overs from the weekends pulled pork shoulder to create a Smoked Pork Ragu

Smoked a scotch fillet steak lightly with hickory, sautéed some mushrooms in onion gravey, packed it into a cut up French stick and threw it in the sandwich press. This was the delicious result.

Rib eye steak, seasoned with Kosher salt and done indirect on the Smokey Joe with a handful of hickory chips. The sear was done at the end with a blow torch.

Seasoning well and early is important

I would say yes mate. I always get bone in as I love chewing on it at the end!

Most butchers have them with and without bone.

If you're unlucky or desperate enough to get one from a supermarket then you'll nearly always get them off the bone.

I'm with Urban Pit Master... I love chewing those tasty bits on the bone.
