1st week on new kamado
This is some butter bomb steak. Beef from organic home grown grass fed steers.
Marinated steak, quick and hot, a couple of minutes each side. Then rest in some butter/chilli/lemon/garlic/slat/pepper, back on heat for a couple of min each side and then a final rest in the butter.
Regular roasted beg and maple syrup roasted pumpkin.

Buy a river fish, catfish is best, gut and skin it.Rub it inside and out with coarse salt and knead it hard for ten minutes. Wash clean, and salt again and knead it.
Pop it into the pot with more salt and rice bran, cover with a wooden lid. Put it in a cool dark spot where the smell won't bother you. In 3 months it will be usable but six months is best.
This becomes the potent umami flavour you spoon into your sauce recipes.
