First run on the little Hibachi tonight, just basic satay skewers with a little charcoal goodness. The flavor was amazing!

8 hours @ 225f, apple, cherry and mesquite added at the start. Internal was 200f at 5pm checked with a thermapen. Foiled, toweled and into esky for 1 hour. Was easily the best PP and smoking session ive done on the Akorn because i just relaxed and not worried about chasing temps!
That is exactly the way we treat pulled pork. Get the snake going then walk away and check back 8 hours later. Ours usually get done overnight and don't bother with foiling until it goes into the esky. Beats worrying about temps!

They are great little units those hibachis. Some of the best nights we've had outside have been spent sitting around that grill with a few friends and a few wines just cooking small morsels of fish, steak, scallops, prawns and whatever else we can find. Such good fun.

And Chris, I love the look of those sardines.

Also some pulled pork done on the weber for a mate's bucks party recently. Smoked with Apple & Cherry and spritzed with Apple juice/SBR/water mix every so often.

Pulled and ready for rolls and slaw...

It has begun. Just shy of 5kg worth of pork scotch. Rubbed just before it went on and injected with apple juice while on the Weber. It was too big to prep earlier as it barely fit in the fridge.
On at 7pm for dinner tomorrow.
