I hate to say this but even I'm thinking of joining the pellet revolution :shock: the fact I could cook 4-6 Briskets at one time with ease is what's got me looking at one. 8) :D

I needed to cook something that wouldn't be too needy as far as attention goes. So I rolled some wings in some Louisiana Wing rub and set them up as indirect. I used a folded Aluminium tray as a heat shield, and tossed in some apple chunks.

After I had done some work on the boat I checked on the wings, flipped them over and tossed in some more apple.

And for an added treat, I mixed some Baby Ray's honey sauce with some habenera sauce and slathered some of them in it and then put them back on for another half hour or so.

Although it was bit spicy, everyone loved it. I served it with a side of oven baked chips and some Tabouli. Sorry I didn't get any pictures on the plate.

I picked up a hark/coolabah smoker last night from Fab aka Narmnaleg, mainly got it as a keep warm but curiosity got the better of me and I decided to have a cook in it! So went to the local butcher in my lunch break and picked up a couple of beef shorts (asado style ) simple salt n pepper then into the unit with some mesquite wood!

Here's how it went!

Into ole mate for 4 and about hours

After 4 hours I was greeted with this!

Then into the foil with some little creatures pale ale! Threw some snags in too! :)

Great work Kurt, looks absolutely delicious. Aside from the excellent smoke ring, I love the look of that fatty bit in the last photo! I bet there were no leftovers :)

Yes great wings! Yeah the Kettle makes crackling so good i think i will be WSM the next one with nice chewy skin my teeth cant handle that stuff anymore!

So after some "UNPLANNED" time away from home i had to have me a Brown brown meal cooked on fire 8) One of the grates from my Off-Set sits perfect on the 4 tabs of the Kettle so i can get that cast iron sear like so

While away the Mrs bought some great meat inc some full Scotch fillets she had cut approx 30mm tk heres 4 of them ready to hit the lump

The others hate tinned mushies will only eat fresh....me.....love em :oops: heres mine with 4 x bean & garlic

Tried some Beef (topside) and Pork (unrolled rolled shoulder) for the first go on the offset.

I used charcoal and hardwood. Massive smoke and smoke taste which I didn't mind but I think I will try some beads next. Who knows?
