Been a long time since I used the full 3 shelf capacity of the Memphis Pro! Have a Buddy in SoCal that asked me to cook some for him and since this next trip to Pasadena to pack up the house will probably be my last time in SoCal, hard to refuse!


I guess a different kind of 3-2-1!

They just finished 2 1/2 hours at 275°...they are now in the Crutch for 1 1/4 hours @ 255°, will then go back on Smoke mode and sauce for 30 minutes!

They had good color and were a lot more tender then the bend test indicated...I think Lee will be happy!

Normally dont like to half a rib. but most folks just dont have a pot big enough to reheat a full rack in, and oven and micro reheated ribs are just unacceptable!

Werribee chicken nibblies again. *Weber compact*
The 6 on the have a chilli salt rub thing that came in a jar and the rest were marinated in Sesame oil,soy sauce, sweet chilli sauce and garlic oil.

I picked up a bottle of Lebanese Garlic Sauce at a local fruit shop the other day. Never used it before but thought that it might go well on a staeak

Marinated 2 Scotch, 1 Rump for an hour in a cmbination of a few tbls each of the sauce and Corn oil

Grilled up, it gave the staeks a fantastic flavour :P
