Went to Costco on Saturday, what a bloody nightmare! Sole reason for going was the Tri-tip.. They only had 'tri-tip steaks' but I wasn't going to leave empty handed!
Halved them, coated with a little Wasabi infused EVOO, and then coated in Tatonka Dust.
Time for new plates!
One of the best steaks I have ever had...anywhere!

Did you cook these like you would a normal steak? I'm off to Costco this week looking for some goodies.

Check out there pork spare ribs. I picked up a couple of nice looking ones.
Also picked this up so might give it a try on some of the ribs I got.

Before you likely ruin your whole cook. Do yourself a flavour and try it on a sample piece Ken, I got suckered into buying 1L sauce from Costco too.... It was far from good. I think beaver has tried that ^^ I got "Johnny's"

used my bbq twice over the weekend. no photos as it was just standard fry up stuff (some chevaps, onions and potatoes one night, chicken snags the next)
however, since our oven is broken i decided id have a go at using it to do my roast vegies. took a bit longer than expected but came up great.

Well I got some blood test results on Friday, not good... I need to cut down my cholesterol... so before I go on a change of 'lifestyle' and lower my intake of fatty meats , I had to do one last cook.
I decided to go with a purist cook of course, Memphis dry rubbed ribs!
Here is how they turned out!
Dry rubbed with "My House rub" :geek: then 3-2-1, mopped (beer + 1 Tbsp of your rub) and smoked with hickory wood.
Best porkies I have done I would say, just right not too soft but a nice chew off the bone texture.

My wife got the Johnny's Ranch Dressing, hasn't tried it yet but I'll let you know if is crap!

Found a couple forgotten about small buffalo rib-eye steaks in the freezer that seemed perfect for a Memorial weekend meal. Applied a light coating of roasted garlic olive oil and seasoned with Tatonka Dust.

Put the steaks and twice baked potatoes on the Yoder YS640 and smoked for an hour at 150º with Tennessee Whiskey Barrel pellets in both the hopper and the tube smoker.

Then cranked up the heat to 500º and started searing the steaks on the grill grates and added the panned shrimp that were seasoned with Tatonka Dust, minced garlic and butter.

Just had to add both pics of the steaks getting there grill marks during the sear cause I thought the sparks in the pictures were pretty cool!

Sum nice Marylands rubbed down with a mix including a lot of lemon pepper
On to the Wsm with some spuds
Smoked with some pellets, basted with Louisiana hot sauce, and heaps of butter in my tater

More Chicken! this time wings - 16 hr brine thought they might have fallen apart this long but instead i had the juciest best wings i have ever eaten!!! man i WILL be doing that again.
Gave the new wsm the day off been working her hard latley, and did these on the off-set and used all black wattle
