I cooked it on the Kamado Joe - I am fast learning that all can be cooked on the Red Egg :idea: lol

Short ribs. Gidgee charcoal with Ironbark chunks for smoke on the Beefeater Rock Kamado. Red Desert Dust from Cherikoff for the rub and basted with Mountain Pepper BBQ sauce also from Cherikoff. One of my fav rub/sauce combo's and 100% Australian flavours.

Finger got in the way in my rush to get a pic before it disappeared. Took the ribs to 95c internal as I always do for shorties.

Roasted an easy carve lamb leg today. it got a bit drier than I would have liked, but I needed to wait for the girls to be ready.

That looks a mighty fine feed,love boudin and andouille,the abt burger might surprise a few,will be back in Texas in a few months and can't wait to grill and bbq some of the things we don't really get much of here.

Smokey Mick & Card Shark not sure if you have tried the beef shorties from Jacks yet but if what i had is any indication the bloke deserves our buissiness, bloody beautiful.

Pics make them look very black but that was the Skeet smoke & big Ricks "hot as sauce" the bone's slipped clean out and meat was so juicy & tender :D

Some think brinning beef is a waste of time.....what ever floats ya boat....works for me

My mum was at her local butcher (The Meat store Taren Pt) and picked these up for me... I timed this cook very poorly lol

They came cryovac packed

Pulled them out, washed down, pat dry with paper towel, evoo, salt and pepper only

Chopped up some potato, leek, red onion & carrots

into ole mate weber for 1.5 on 100* (pulled out at 160*f internal)

Cubed out

Image

And into the slow cooker! (to put it simply the stock is beer base with bbq sauce)

Added my veggies after smoking/roasting for about 1.5 hours.

Served with toasted french stick drizzled with evoo.

This was delicious, but my god time consuming... :lol:
