Roast Pork tonight

Rolled out the Akorn to cook some pork tonight.

Nothing fancy from Coles on special.

With the cool winter weather arriving the smell of pork cooking over charcoal you can pretend it's getting close to Christmas in the northern hemisphere.

No photos as it is nearly impossible to load a photos with the 256kb limit.

I did a roast pork a few weeks ago in the Weber kettle but the crackling wasn't as good as I hoped as I think I didn't render enough fat out from under the skin but it wasn't a complete failure.

I found this Catering goods store a few weeks ago in Albury, extremely well stocked for the Commercial sector but they also sell to the public. Wow, so many things I could use for BBQ in that place.

I found one of them (not sure what you'd call it) multi needle tenderizer contraptions where you can make hundreds of holes in pork belly and pork skin and other meats, maybe even fatty chicken by pressing down on it multiple times allowing the needles to pierce the skin to help render fat and to help with tenderising and crackling.

Haven't had to chance to try it out yet.

It can be kind of hard to get good crackling as the new style pork (better for you???) doesn't have a decent fat layer from the supermarket.
