Bark, what are your thoughts.. on or ALWAYS off?. I’m trying some Black Wattle today smoking a few wings (thank you bbqmad) and the recommendation was to remove. Interested in others experiences on other local timbers. CS

I leave it on.......due to laziness more than anything
Also the bags of wood I've bought have always had it on

I always remove the bark.

Some timber you can use the bark (Fruit woods like citrus) But most bark will give off an acrid stink thats not palatable, Or not best practice. Its not the be all and end all but you will get finer results without tanin loaded bark.
Particularly with that wattle Glenn sent, Smoking with that bark is like smoking with pitosporum. Clean wood? sweet and strong

I see that Banksia has made the cut in the smoking wood matrix

YES!

I use them all the time....Banksia is great smoking wood.

I put them in my Kamado and on top of the snake!

That's interesting. Do you soak them like wood chips or just use dry?

These are easy to come by and collecting a bag of them is easy to do
Plus there seasoned by the time they hit the ground
I'll be trying them out this weekend

Just use them Dry.

I go for a walk in my local park every now and again with a couple of those green reusable bags from the supermarket and pick them up off the ground....easy and one of the best smoking woods you'll get!

Love the table, but can I suggest that for the next version you transpose the rows and columns so it's easier to work with? The forums display tall and narrow pictures a lot better.
