You did extremely well considering you had never used a Pellet Cooker before & to then cook for 90 people.

I had loads of positive comments from your staff.

Well exciting times indeed, our very first 40' Container is due to land to us tomorrow lunchtime!

Its all good, seriously :D

I hope too, all the BBQs are pre-sold so their owners are super keen to get hold of them ASAP.

2 members on this forum from Adelaide both have a YS640 in this first container & one is even coming out to help us unload!

I have a Yoder YS480 & YS640 here now & about to have more including Offset Smokers.

You are welcome to call in anytime & have a look, in fact I had some forum members here on the weekend & we cooked up some Planked Salmon & some steaks.

When my sign is out, Im open. Otherwise just give me a call to make sure Im here.

Well our container from Yoder was held in Adelaide by Customs for a "Spot Inspection" ....... anyway, because Adelade does not have any X-Ray our container as well as a few others needs to be unloaded by hand by Australian Customs, re packed & then cleared so if we are lucky we may see it this week, otherwise we are probably looking at the week after.

So, nothing to to but cook, eat & be merry! Heres how we spent yesterday!

Pork Belly slow cooked on the Yoder YS640 Pellet Grill for 5 hours at 225F & then finished off at 550F to crisp up nicely.

Cooked to perfection with a gentle hint of smoke.

A few glasses of nice Vino.

American Scallops cooking nicely on the cast iron griddle ( YS640 accessory )

American Scallops on a Cauliflower Pure -with toasted ham bits - these tasted totally amazing, restaurant quality!

Even the dog was chilled out.

After a few hours we fired up the Yoder YS640 with the Grill grates & set the temperature to 470F - you really need a nice big area of flame as the Cedar Planks take up lots of space.

So, on went the "Mango Jalapeno Planked Salmon as well as some Barra to try out.

Once the white smoke appeared it was time to move the Planked Salmon from the Direct Grilling to the Indirect Grilling area to finish off the cooking.

Dave, those are big bits of Cedar. In Adelaide you should be able to get Western Red Cedar lining board planks, (quite cheap) they are tongue and groove, so they clip together to make whatever size you want, then use a pizza spatula to move the whole thing.
