Big Cook this Weekend - thoughts please?

Hi fellow pellet heads,

I have this:

What you are looking at is a 3.5kg point end, and 7.3kg of mutton ribs (6 sheep worth) from the family farm.

So we have up to 50 people (kids included) coming over on Sunday lunch. So my plan was to cook this lot on Saturday (in the Traeger), reheat Sunday morning, and chuck the 5 kg of chicken wings in the Traeger on Sunday to serve with this lot re-heated.

So, I have a spice mix I love on lamb, so I'll do that, and was thinking the dalmatian mix on the point end? Thoughts?

Now, the question I have is after I feel the meat is done, I'll rest in an esky for a couple of hours before going in the fridge, do I leave the meat whole, re-heat and carve on Sunday when warm again or carve before putting in the fridge? My gut is telling me leave it whole, just wanted your thoughts?

I also need to work out how to brine this lot tomorrow before I cook on Saturday, I'm leaning towards putting brine solution in the Waeco CXF 50, they are water tight, so why not?

I think you will retain more moisture and the ribs will have a better flavor if you can reheat them whole.

Keen to see how that brisket turns out. Bought one of those after we had a chat at the speakeasy and whilst the burnt ends from the point were phenomenal, the flat was a little dry due to it being quite lean. Keep in mind I'm yet to experiment with injecting etc, just a dalmation rub and then onto the dragon.

Gents, I have a public service information piece for you.

If you are in the market for a 50L portable fridge such as a Waeco or Engil, and the wife asks:

"Well how much stuff can you actually get in them?"

Well you can confidently answer with:

"7.6 kg of lamb ribs and 7.4 kg of brisket with room to spare honey".

I got the brine going.

Really well. Very little left over so I'm glad I got that other brisket off you, and we have a winner in the brisket off. I should get a chance to get some pics up tonight and I'll give you the verdict then.
