mature pekin duck

Post by kiwiman »

The local butcher at work has mature pekin duck for sale which is bigger and cheaper than the standard duck they sell.
How would this go done really slow on pellet cooker?
I think it is sold more as a boiling type duck rather than for roasting.

I like my Duck rare...it's a red meat after all.

But have a read of Jessies recipe: http://www.thehungrymouse.com/2009/02/1 ... ispy-skin/

Cheers
Chris
