because i can.
my son has come up from melbourne for the weekend.............
so i thought i would say welcome to him and his girl.
one of the chooks was injected with a lemon butter mix...........the other was soy / honey mix.
ribs brined and rubbed
pickled pork............fresh water soak

i actually took a couple of pics of the tucker last night.....
not the best photos...............but ........hey, you get to see the food..
they look a little dry but they were not. sauce was appplied as they were consumed.

the wood i used was iron bark for the fuel and redgum for the spice. and yeah that smoke went crazy for a little time. i gave it a bit longer than usual 'cause i was doing a couple of picnic hams at the same time.
still tender and moist though..

Having seen Gordy in Action, I can attest to the great tucker he puts out.....fantastic smoker and the driver Casey Jones...eeerr I mean Commander Cody just knows how to tickle Gordy's fancy
