BBQ Scotch eggs

Hard-boiled eggs, covered in ground pork sausage, wrapped in bacon, dusted with my pork rub, smoked low & slow with cherry wood. Glazed a couple with my pork sauce. Turned out to be a tasty treat!

Munching on them, I almost forgot the pictures!

wow impressive mate what sort of Temp were you working at?

Around 230-240F, until internal reached 165F. Took 3-1/2 hours.

No, I haven't shared my pork sauce recipe. I use it in competition, so it's a bit of a secret. I should develop one that is simple to make and that I can share.

I tried some of these about a month ago I guess turned out great, I wrapped a couple of slices of processed cheese around the eggs before wrapping them in 50/50 pork and beef mince. Had some left over mix so I made some balls with baby buffalo motserella inside, both turned out great and the melted cheese helps with the dryness of the yoke.
