Venison Back Straps & Lobster Tails

Started with 2 venison back straps - the sliver skin removed.

Venison that rubbed with garlic olive oil and seasoned with Tatonka Dust and a little Canadian Steak Seasoning.

Onto the top shelf of the grill with the tube smoker filled with Hickory pellets with a nice smoke rolling along the venison. Smoked for an hour with no heat.

Fired up the grill to 500° and put the venison on to the GrillGrates.

Flipped the back strap over...

For the sides - some mixed veggies and garlic toast

And now the lobster tails - seasoned with melted butter, minced garlic, parsley, and some sea salt. While the lobster was cooking, spooned over some melted butter.

said this a few times about some meals put up here, But if I was condemned to the gallows, Right now Id ask for that as a last meal :D

Looks fabulous !!

Where did you get the venison?

I have yet to find a consistent supplier in Perth, north or south of the river. It's a meat I love and my dad taught me how to hang a whole haunch to age it beautifully and then slow roast. That was probably 50 years ago in the UK and the meat came from dad's boss' estate, never found anywhere that treats it as a serious line of meat to have on offer, here or SA.

Not many places are serious on it in Perth that I have found either Chris, I get down south a fair bit, diving/fishing amongst other things down there, and usually top up the rest of the room not taken up by crays/fish in my waeco with venison. The venison farm on Caves Rd between Gracetown and Margaret River is as the name suggests, a venison farm. The price per Kg is quiet high for most of the products, but I can't resist a fillet of melt in your mouth venison for carpaccio.
