Hi Zorba
Mountain Micks Croc three ways
Croc meat can lean itself to almost any style of cooking and replace chicken, fish ,

Creamy Croc Pies cook the croc in a white wine creamy sauce with carrot, red capsicum & green peas thick and let cool down put in to pie moulds lined with puff pastry put a pasty lid on , brush with egg wast and sprinkle with poppy seeds and bake at 180ºC until pastry is golden brown.

Sweet & Sour Croc cut croc tail into 1" cubes batter on a crispy beer batter and deep fry until gold brown and serve with a home made sweet & sour sauce (vinegar, soy sauce, sugar & tomato sauce plus water & little corn flour) some Asian veg and maybe some pineapple and onion in the sweet & sour sauce.

Smoked Croc Tail
Croc tail rub with olive oil, garlic, pepper, sweet paprika, and chilli, salt wrapped in bacon and hot smoke roast in Weber served with creamy mash & steamed veg (broccoli, carrots & pumpkin)
.
That would be nice. Hope that helps MM
:D

Croc has an unusual taste and texture, can be right tough! The Tail meat is the best.....But I'd rather eat pineapple!

We do cook it for functions during NAIDOC week usually....and it comes up OK!

I brine it in milk....yes.. MILK! 1 Tab salt in 1 Litre of Milk...add spices if you wish. The milk calms the "gamey' or "swampy" flavour down and the brine helps with the moisture.

Then I usually slow cook to 60C, holding it there for as long as you can, then brush with a seasoned or spiced oil and flash sear over charcoal.

Don't walk further than across the road to buy Crocodile!......it's never more than a weeks walk to a butcher!

Cheers
Chris

Makes a good soup.

3 tablespoons Tom yum soup paste (woolies),
5 cups boiling water.
Crocodile cut into strips or cubes
5 tomatoes
Coriander leaves
Mushrooms (whole)

Cook the croc in a wok until it turns white on outside add paste and water, boil for 3 mins
Add tomatoes cut into sixths
Add whole mushrooms
Cook for another 2 mins
Serve with coriander leaves

Goes well will buttered sourdough. Had this for lunch today, nice and quick and easy

Ill tolerate it in a pie or maybe in a chili curry as like Smithy suggested, but it just tasts like swamp lizard to me.
Ever eaten a wood duck from some slimy back lagoon? Blahh, Id rather grill carp or tilapia.
Sea gull is worse  , Will never get pissed on a boys survival trip and decide to knock one of those over the head and eat it again

Just like shark, if you soak it in milk for a few hours it will lose the gamey metallic taste. Croc meat has the ability to take on additional flavours once the strong taste has been neutralised so it lends itself very well to flavours like basil and pepper.
Blend up a bunch of basil a couple of tablespoons of pepper corns a pinch of salt and some oil and coat the croc meat with the paste and leave to marinate for 2 hours, scrape most of the paste off and grill over low heat with the hood down for about 5 - 7 minutes a side depending on the thickness cook to medium only.

Cheers

BBQ Guys (on Youtube) cooked up a 5 ft Gator (same basic animal) on a large BBQ. They stuffed it Crawdads (Yabbies) etc and it looked very good!

I agree with livewire, had a croc schnitzel at the Cock and Bull pub in Cairns, tastes a bit like fish with a chicken texture and appearance, with a good squeeze of lemon it tasted fine.
