Stuffed Foccacia

I used my basic bread recipie

1kg strong bread flour
2 t bl spoons salt
Mix together, I use my magimix

2 table spoons sugar
3 sachets yeast
750 ml tepid water
Mix in a bowl and rest until foaming and yeast is activated

Mix wet ingredients into dry the knead until smooth and elastic , may require more flour .
Rest in a bowl covered with cling film in. Warm place tll doubled in size.

Remove from bowl and knock air out and stretch or roll out to twice the size of your roast pan, lay half in the pan and drape the rest over the side then as a couple of good lugs of olive oil and add stuffing.
I used parmisan, cheddar motzerella , spinach proscutio and feta.
Lay the top section over and tuck under the bottom section.
Let rest until doubled in size again and then bake at 180 for 25 mins until golden brown and cooked through. Could use almost anything for the filling and it's a great bread recipie for loaves or rolls too
