Thats a good one, Ill put it to the comps officer.

Glad to report that my Mother is coming along nicely,, who'd of thought you get free yeast out of the air :shock:

The "wild thing" is a big topic SM. Few seem to bake like us on a BBQ yet, or with a touch of nature in very subtle smoke... A couple of sites related.

Wet NY sour dough style crust (frozen) egged quickly @ 650f. Ham, olives, mushrooms and anchovies under motz. CS

Awesome CS - what temp was the oven and how long was the stone in before you put the pizza on it ?

Took about 45 minutes mate. Dome 600f for 20 minutes or so before the first test pie. 575 is where I like it for my dough. Drops to 550 with lid up when it first goes in then creeps up. Left that one on a shade long.
