Pizza base too hard

Hi
I have been trying to get pizza's right on my baby q but am struggling with the base, they are coming out too hard/ like biscuit I have the stone, trivet and convection tray set up correctly, i preheat for 20 mins as suggested, the topping is perfectly cooked and is not too heaped, i normally leave the q on high and cook for around 18 minutes what am i doing wrong??

btw they are supermarket bought pizza bases.

Depends upon which bases really.

When you say "hard" you mean too crispy ?

I've had them be that way with some of the quick cooks using store-bought.

Really by using store-bought you are giving up a degree of control, have a look around on the site and do a batch of bases from scratch using the recipes.

You wont regret it :)

Yeah make your own dough - supermarket dough is bad. I use the recipe in the book "the silver spoon" which is 2 cups flour, salt, sugar, couple tablespoons olive oil, 250ml warm water with yeast in it .... From memory

Store bought pizza base, That is your problem.
Sounds like your little Q is cooking too hot for pre cooked store bought bases.
If it's doing that? then it will be perfect for fresh made wet dough.
Those premade bases are designed for indoor ovens and not hot pizza stones.
Go the extra step :)
My fave is the fermented dough that Captain cook put up here abouts.

Once you've done a few making your own is easy. We cheat and chuck the ingredients in the bread machine. Mixes and rises it for us while we get the Weber cranking and the topping ready.

That's the brand we use. Good stuff. I've never had much success with pre made bases, they are too dry.

Nothing wrong with that, do find kneading kinda therapeutic though - stops me becoming a corporate serial killer :)

Andy the above quote is the fundamental problem, along with the fact that you probably still have too much heat on the bottom compared to the top.
You could try making the pizza in the oven, does the result change when heat is more evenly distributed?
I've never used store bases on the BBQ, so please take this with a grain (or tonne) of salt: have you tried wetting the bottom side of the base with a bit of water to soften it before you put the toppings on?

In the end there's nothing like making your own dough. You only need 4 ingredients and a simple process:
- Flour (500g should make two pizzas)
- Water (300ml, 60% ratio to flour)
- Dry yeast (half of one 7gm satchel)
- Salt

The simplest pizza dough: Melt the yeast in warm water in a bowl, add the salt then the flour. Mix it with your hands for 2 minutes. Leave it alone for 10 minutes, then mix it for another 2 minutes. Cover the bowl with glad wrap and a tea towel. 2-3 hours later it's ready for you to stretch and cook.

Once you make your own dough you'll never go back to store bought again. Doesn't take long to make and it's pretty simple.

Have not been able to top this base recipe so far.....

250ml water
1 tsp salt
2 tbs extra virgin olive oil
1 tbs honey
50 gr. polenta
350 gr. bread flour
1.5 tsp dry yeast
Combine, rest 30 min, knock down, rise 30 min, make two bases, rest 30 min, top and bake.

My son uses a pizza dough base for use in the oven, in the kitchen, that comes in a plastic bag, as a "runny" mix, which is sold in the supermarket refrigeration area. I do not know the brand, however.

Btw, my pizza dough recipe also makes a killer Calzone,
Garlic, mozzarella, Edam, goulda, parmesan and blue cheese, chilli and olive stuffed.........Image
