Pizza Perfect Pie - 3 inches high

Hi Folks,
Here's a great fluffy base recipe that's different than the normal heavy, deep pan dough.

This makes enough for one 12 inch and one 15 inch base, or 3, 12 inch bases.
It will make a whole lot more if you roll it out thin, but this recipe works thick.

Ingredients

1 3/4 cups warm water, about body temp
4 1/2 cups flour
2 teaspoons instant dried yeast
1 teaspoon salt
1 teaspoon sugar
1 teaspoon bread improver
2 tablespoons olive oil

Trying out a new pizza stone rack that holds 3 stones.

To help get the extra rise, I remove the pizza from the Q after a couple minutes for several minutes, then back on the stones minus the tray till done.
Yes it is not the conventional way, but by trying all sorts of ways to do things, every now and then we stumble on methods that work wonders.
Lol, you should see what we do to meat at times :!:

They look great M&E but what do you mean here?? are you saying 4x 1/2 cups of flour in other words 2 cups?

Why did I even bother posting that, sorry clearly 1/2 cup of flour wont make all of that. :oops:

Brand - Outdoor Magic
Cost - $10.80
Where from - Garganis Bros http://www.gaganisbros.com.au/

Can't say that I like this rack. Its not very functional at all,
But a visit to Garganis Bros in Adelaide is a must.

You must be doing something different as that dough is almost same as what I do.
Do you mix it and proof it or do you chill it and let it ferment overnight before proofing?.
I do admit that I spin them on the thin side and I do like the fermented flavour but that is almost a bread roll :shock:
Oh, I do have bread improver but dont use it for pizza, Is that the trick?

I use a magic wand! :)

Sometimes I proof first then refrigerate over night for flavor, but the ones in the pic, I proofed for an hour, then used straight away.
If you use this amount of dough for the 2 bases, it is a very thick uncooked base that has nowhere to go but up.
I use a high protein flour.
Mix this dough really well.
Yep the bread improver helps to fluff the dough up some. (Not to be used in thin and crispy bases.
Taking it out of the Q after a couple minutes lets it rise a lot, from that first burst of heat. before the real cooking starts.
I cook them hot. Even these thick ones only take 10 minutes.

wow, i saw one of these at bonza bbq's today for $20. will definitely check out gaganis tomorrow. i was going to get the wiltshire one

Yes they do Zorba.
$8.95 gets you a 12 inch stone, a rack and a wheel type cutter.

I picked another stone up there last Friday and they had a few there then.

Don't know Zorba.
Different stock different days.
Sometimes they have had hundreds of pizza trays of just about every size ever made.
Other times just a few.

Interesting place.
They bring in a lot of lines from overseas that nobody else does.

Caterfix is just around the corner across from Coopers (Hindmarsh) soccer stadium, with another catering place just a couple doors up
