Jan's Chocolate Pear Cakes with Cocoa Sauce
Recipe.
Poach 12 pears in 3 cups water with a tsp Vanilla bean paste for around 10 minutes.
Keep the water and add 1/3 cup of Cocoa powder. Whisk in and reduce.
Whisk together 2 eggs, 100 ml sour cream,80ml oil, 20g melted butter, 120g light brown sugar until just mixed.
Then whisk in 200g melted dark Chocolate.
Sift together 120g plain flour, 35g cocoa powder, 1 tsp baking powdewr, 1/2 tsp carb soda, add 1/2 tsp salt and 40g ground almonds and fold gently into mix.
Spoon batter equally among 2 x 6 hole buttered muffin pans.
Push a pear down into each one and cook for 20-25 minutes at 170Celsisus
Let cool in pans before trying to remove.
Serve with sauce and ice cream.
