Trying my hand at Pastrami

So I probably spend more time on this forum at work than I actually work at work.
Have decided I will try a Pastrami this weekend. Taking the easy route and went for a corned silverside and it is in the fridge soaking in water overnight. Will chuck the rub on it tomorrow morning before work and plan to cook it on Saturday.
The rub is from Muppets Pastrami thread.

Thanks muppet. Will have a read through that tomorrow.
This is a fairly thick silverside. Does it look ok or should I trim it down a bit?
Did you leave the fat on the top or trim off?

I'd trim most of it off, thick fat shrinks and messes with the rub

Nearly 3 hours at 250f and the meat is at 160f so out it comes and into the steamer for finishing.
Had a small biti trimmed off so chucked that in to cook as a tester. Nice flavour from the rub.

Steamed to 205f, rested for a while and had to slice a bit off for a taste.
Awesome. Bit spicy but delicious.
