Muppets Characuterie adventure Pastrami

With all the delicious looking small goods members are knocking out, Ive decided to take the plunge. First cab off the rank is the Katz Knock off pastrami.
This one is a store bought corned beef, possibly blade by the looks that was on special (Brisket was used in the original recipe) Rub and cooking method is lifted straight from Amazing ribs so if it works, all credit to them.
The corned beef soaked overnight to desalt, then dried and coated with rub.

Pastrami rub

4tbs coarse black pepper
2tbs coriander powder
1tsp mustard powder
1tbs brown sugar
2tbs paprika
2tsp garlic powder
2tsp onion powder

Then back into the fridge for 2 days to set the rub.

Smoking time! Brought to room temp then into the Kamado for some mesquite/hickory loving. Going to smoke to 160F then chill, wrap and fridge overnight. Then tomorrow a steam to 205F. Lets hope it works alright.

I used the recipe from the same site and had awesome results... I strongly recommend following the links back through to the beginning, starting with brining your own meat rather than using store-bought. I've done 4 batches the biggest was about 8kg.

I will next time Garth, We have 2 bellies and a ham curing but I needed something to cook :D
2hrs steaming this morning and I'm pretty impressed! Was a little worried I overdid the pepper but the steam has mellowed it out. Still a hint of smoke and the texture is sensational.

I just used a vegie steamer mate, Just a basic electric one.

Looks bloody great, just found a corned beef in the freezer wonder if the Minister For War & Finance will notice it missing haha
