Mountain Mick's Ghost Chilli Pastrami

Here is a look at my Mountain Mick's Ghost Chilli Pastrami

first I make a rub of
3 part sweet Paparika
1 part cummin powder
1/2 part corandier powder

which I cover the corned beef
now cover with Ghost Chilli flakes,
This I cover with Aussie Black Pepper "Kibbled" now in to electric Masterbiult smoker for a light smoking 3
15 minutes I think I need to do it for 30 minutes at 120C , then warp in 6 layers of foil and cook for 14 hours at 85C and finish the last 2 hoursc at 95C

I keep forgetting to give em to you whenever your around.
All milder chilis this year but I still have a large bush of Trinidad Yellow scotch bonnets fruiting off its nut.
Of all of them I recon its got the best flavour.

Thanks SM. Is there a preferred way to do them on a BBQ / smoker to dry them out? Started a modest chilli garden this summer with a few common ones.

The Ghost Chilli Flakes are Naga flakes , you can get them mail order from The Hippy Seed Company , cheap as chips, Very hot and the smokey ones are great as well I love them on Pizza, MM :wink:

and if you use too much the word that comes to mind is " devastating hot heat "
